14. Some Chinese dishes are popular in western countries but they may not be popular in China. Many Chinese people even don't know the names of them. Can you believe it?
About 70 years ago, a Taiwan chef (厨师)made a dish called General Tso's Chicken (左宗棠将军鸡). In fact, this dish has nothing to do with the General Tso (Zuo Zongtang). In the 1970s, the Taiwan chef brought it to America. Henry Kissinger loved it a lot and it soon became popular. The Chinese restaurants in America started to make the dish similar to General Tso's Chicken. The dish tasted a little salty and spicy (又咸又辣). But later, it became a sweet dish because Americans loved this taste. Now, General Tso's Chicken is also called Sweet and Sour Chicken. Maybe in Hunan, General Tso's hometown, a lot of people do not know much about this so called Hunan dish.
When Chinese people talk about "chop suey (杂碎)", they mean animal organs (器官) chopped up together. Western people don't eat organs, so the American "chop suey" is not a dish of animal organs. It is a mix of cabbage, pork, green pepper and onions. It is a Chinese dish to many people in western countries, but it is becoming less and less Chinese. Back in 1903, Liang Qichao tried this dish when he visited the United States. He said: "Chinese people would never eat such a dish. "
